Aronia Raw Cranberry Salad

2 small boxes raspberry gelatin

2 cups water

1 cup cold water

Note:  you may want to cut back 1 cup of water since the Aronia berries are so juicy.  Let gelatin slightly thicken then add rest of ingredients.

 

Mix the following:

1 large can crushed pineapple with juice

1 cup cut up celery

1 cup raw cranberries – ground

1 cup Aronia berries – chopped

2 cups sugar

1 orange – ground up

Nuts (optional)

Let stand

Once gelatin is slightly thickened add the above to gelatin and refrigerate overnight.  Serve cold.

Aronia Berry Citrus Quinoa Salad

Serves 4 (entrée) to 6 (side dish) 

2 cups fresh or frozen (thawed and drained) Aronia berries 

1 cup (uncooked) quinoa 

1-½ cups water 

2 tablespoons real maple syrup 

4 whole green onions, thinly chopped 

¼ cup coarsely chopped fresh cilantro 

1 tablespoon extra-virgin olive oil 

1 lime, juiced 

1/16-1/8 teaspoon cayenne pepper (optional) 

Salt to taste 

Rinse quinoa in a fine mesh strainer or through cheesecloth. Allow to drain 20 minutes. Add quinoa to dry 4-6-quart pan and toast over medium heat, stirring constantly to prevent burning, for 5 minutes.  Remove pan from heat, add 1-½ cups of water, return to medium-high heat and bring to a boil. Cover, reduce heat to low, and simmer for 15 minutes or until all liquid is absorbed. Remove from heat and remove lid, allowing to cool undisturbed for 10 minutes. Fluff with fork and place in refrigerator to chill for at least 1 hour.  Meanwhile, place Aronia berries and maple syrup in small saucepan and heat uncovered on low for 10 minutes, stirring gently after 5 minutes. Remove from heat and allow to cool 5 minutes. Refrigerate until ready to assemble salad.  Combine quinoa, olive oil, lime juice, green onions, cilantro and cayenne in large bowl and mix well.  Add berries and gently stir until evenly distributed. Taste and add salt if desired. Enjoy! 

Fruit Salsa with Aronia 

2 kiwis, peeled and diced

2 Golden Delicious apples – peeled, cored and diced

8 ounces raspberries

16 ounces of strawberries, diced

8 ounces Aronia berries

2 tablespoons white sugar

1 tablespoon brown sugar

2 tablespoons fruit preserves, any flavor

In a large bowl, thoroughly mix kiwis, apples, raspberries, strawberries, Aronia berries, white sugar, brown sugar and fruit preserves. 

​

Cover and chill in the refrigerator at least 15 minutes.

​

Serve with crackers or cinnamon chips.
